Instant Pot Pork Chops

These simple and scrumptious instant pot pork chops are the perfect weeknight meal! My family fell in love with them the first time I made them – even my pickiest of eaters. 

What I love about quick and easy Instant Pot meals is that there’s less clean-up since I can make everything in one pot. I can, also, easily make the sides (or delegate to one of my tweens) while preparing the main dish.

Quick and Easy Instant Pot Pork Chops

Children can also assist with the food prep. My daughter quickly found a shortcut to seasoning the pork chops by putting everything in a Ziploc bag and tossing them around. My son typically cuts the goat cheese with a butter knife for his contribution.

First, add olive oil to our pressure cooker and select the Sauté function. Set to high and once the display reads “hot,” add half the pork chops and brown on each side. They take approximately 2-3 minutes per side. I transfer chops to a plate and repeat process with remaining chops.

Next, turn the unit “off” and add the first batch of chops and chicken broth. Replace the lid and set the pressure valve to “sealing.” Select the “Manual” cooking option on the high setting. Set the cook time to 10 minutes. When done, allow the pressure to release naturally for 10 minutes, and then do a quick release for any remaining pressure.

Finally, remove the lid and transfer your pork chops to a serving platter. Add goat cheese to the Instant Pot® and stir until melted. Taste and adjust the seasonings, as desired.

Ingredients

  • 6 6-oz. boneless, thick-cut boneless pork chops
  • 1 teaspoon garlic powder
  • 1 Tablespoon Italian seasoning
  • Sea salt and black pepper, to taste
  • 1 Tablespoon extra virgin olive oil
  • 1½ cup chicken broth
  • 6 oz. goat cheese, room temperature and cut into chunks

Instructions

    1.Sprinkle pork chops on both sides with garlic powder and Italian seasoning. Season with salt and black pepper, to taste, and set aside.

    5.Serve immediately with some of the sauce spooned over the chops. Enjoy!
